Baked Apple Pancake - Sweet Breakfast

The Dutch Pancake originated in America. And, unlike an actual pancake, it is not made in a frying pan and doesn't need baking powder. It is more akin to a large pop over.  Here's my version of a childhood favorite: Bickford's Baked Apple Pancake. Most New England natives hold a special place in their hearts for the Bickford's Baked Apple. Thus the shape! If you have children, they will love making this recipe along side you.  Pre-heat the oven to 400 degrees and let's get on with the deliciousness, shall we?!


(Serves 3)

2 T Sugar

1 tsp Cinnamon

2 T Butter

1/2 Cup Flour

1/2 cup Whole Milk

4 Eggs

1 Large Apple


Pre-heat the oven to 400 degrees.  Mix the sugar & cinnamon in a small bowl and set it aside.  Put the butter in a cast iron skillet if you have one, but I used a thin aluminum heart shaped pan shown here and it comes out with good results.  Mix the flour, milk & eggs in a medium bowl.  Heat the pan or skillet in the oven until the butter is melted.  While the pan is heating up, peel, core and slice your apple.  Carefully remove the hot pan with melted butter from the oven and pour the batter in right on top of the butter. Next; arrange your apple slices in a single layer on top and sprinkle with the sugar/cinnamon mixture. Place back in the oven for about 20-23 minutes.

 Once done, let it rest a minute or two (the puff will settle down) and pour on your maple syrup. Eat!
